- 20 large fresh okra pods

- 4 oz Pepper Jack cheese (cut into thin matchstick slices)

- 1 cup all-purpose flour

- 1/2 tsp smoked paprika

- 1/4 tsp cayenne pepper (optional)

- Vegetable oil (for frying)

- Toothpicks (optional, for securing stuffed okra)
Instructions
Step 1: Prepare the Okra
Wash the okra pods thoroughly under running water and pat them dry with a clean towel. Using a small paring knife, make a slit along the length of each pod, being careful not to cut all the way through. This pocket will hold the cheese. Remove any seeds if needed to create room.
Step 2: Stuff with Cheese
Cut Pepper Jack cheese into thin slices or matchsticks small enough to fit inside the okra pods. Gently stuff each pod with the cheese. If needed, secure the opening with a toothpick to keep the cheese from oozing out during frying.
Step 3: Prepare the Breading Station
Set up a breading station with three shallow bowls:

- Bowl 1: Buttermilk (for soaking)

- Bowl 2: Flour mixed with salt, black pepper, paprika, and cayenne (if using)

- Bowl 3: Cornmeal mixed with beaten eggs for the final coat
Dip each stuffed okra pod into the flour mixture, then into the buttermilk, and finally roll it in the cornmeal and egg mixture, making sure each pod is fully coated.
Step 4: Heat the Oil
In a heavy-bottomed skillet or deep fryer, heat vegetable oil to 350°F (175°C). Test the oil by dropping a small bit of batter in—it should sizzle and rise to the top immediately.
Step 5: Fry the Okra
Gently place the breaded okra in the hot oil, being careful not to overcrowd the pan. Fry in batches for 3-4 minutes or until golden brown and crispy. Use a slotted spoo
