Description

Crispy-skinned baked potatoes loaded with seasoned taco meat, melted cheese, and all your favorite fresh toppings.

  • 1 pound lean ground beef

  • 46 medium Russet potatoes

  • 1 packet (1 oz) taco seasoning

  • ½ cup water

  • ½ cup sour cream

  • ¼ cup green onions, chopped

  • ½ cup fresh tomatoes, diced


Instructions

  1. Bake the Potatoes:
    Wash and scrub the potatoes well. Pierce them all over with a fork. Bake at 400°F (200°C) for 45–50 minutes until fork-tender and the skin yields slightly when pressed.

  2. Cook the Taco Meat:
    In a large skillet over medium heat, cook the ground beef until browned and no longer pink. Drain any excess grease.

  3. Season the Meat:
    Stir in taco seasoning and water. Simmer for about 5 minutes, stirring occasionally, until the mixture thickens and flavors meld.

  4. Prepare the Potatoes:
    Slice baked potatoes open lengthwise. Fluff the insides with a fork.

  5. Assemble:
    Spoon seasoned beef over each potato. Top with shredded cheese, sour cream, green onions, and diced tomatoes. Serve hot and enjoy!
