1 pound lean ground beef

4–6 medium Russet potatoes

1 packet (1 oz) taco seasoning

½ cup water

1 cup sharp cheddar cheese, shredded

½ cup sour cream

¼ cup green onions, chopped

½ cup fresh tomatoes, diced
Instructions

Bake the Potatoes:
Wash and scrub the potatoes well. Pierce them all over with a fork. Bake at 400°F (200°C) for 45–50 minutes until fork-tender and the skin yields slightly when pressed. -
Cook the Taco Meat:
In a large skillet over medium heat, cook the ground beef until browned and no longer pink. Drain any excess grease. -
Season the Meat:
Stir in taco seasoning and water. Simmer for about 5 minutes, stirring occasionally, until the mixture thickens and flavors meld. -
Prepare the Potatoes:
Slice baked potatoes open lengthwise. Fluff the insides with a fork. -
Assemble:
Spoon seasoned beef over each potato. Top with shredded cheese, sour cream, green onions, and diced tomatoes. Serve hot and enjoy!
